Banana Bread
Ingredients
40g melted coconut oil
40g EVOO
½ cup maple syrup
2 eggs
2 large bananas, mashed
¼ cup almond milk
1 teaspoon vanilla extract
½ teaspoon celtic salt
½ teaspoon ground cinnamon
1 teaspoon baking soda
1 cup gluten free flour
¾ cup almond meal/flour
Optional mix-ins: ½ cup chopped walnuts or pecans or chocolate chips
Directions
Preheat oven to 170 C degrees Celsius
Line a loaf pan with baking paper
In a large bowl, beat together the oil and maple syrup
Add eggs and beat well
Whisk in mashed bananas and milk
Add vanilla, celtic salt, cinnamon & baking soda & combine
Add almond meal & flour & gently combine with spatula or large spoon
Gently add any extra mix-ins (optional)
Pour the batter into the loaf pan, sprinkle lightly with cinnamon
Bake for 50 - 60 minutes
Let it cool in the loaf pan for 10 minutes before transferring to wire rack. Once completely cool, slice.
