Banana Bread

Ingredients

  • 40g melted coconut oil

  • 40g EVOO

  • ½ cup maple syrup

  • 2 eggs

  • 2 large bananas, mashed

  • ¼ cup almond milk

  • 1 teaspoon vanilla extract

  • ½ teaspoon celtic salt

  • ½ teaspoon ground cinnamon

  • 1 teaspoon baking soda

  • 1 cup gluten free flour

  • ¾ cup almond meal/flour

  • Optional mix-ins: ½ cup chopped walnuts or pecans or chocolate chips

Directions

  1. Preheat oven to 170 C degrees Celsius

  2. Line a loaf pan with baking paper

  3. In a large bowl, beat together the oil and maple syrup

  4. Add eggs and beat well

  5. Whisk in mashed bananas and milk

  6. Add vanilla, celtic salt, cinnamon & baking soda & combine

  7. Add almond meal & flour & gently combine with spatula or large spoon

  8. Gently add any extra mix-ins (optional)

  9. Pour the batter into the loaf pan, sprinkle lightly with cinnamon

  10. Bake for 50 - 60 minutes

  11. Let it cool in the loaf pan for 10 minutes before transferring to wire rack. Once completely cool, slice.
